Grilled Salmon Vineyard Salad with Citrus Vinaigrette
Citrus Vinaigrette:
Juice from 1 Lemon
Zest from 1 Lemon
3 tbsp. White Wine Vinegar
Cup Extra Virgin Olive Oil
1 tsp. Dijon Mustard
1 - 2 tbsp. Honey, to taste
2 cloves Garlic, minced
2 tsp. Fresh Thyme
Salt + White Pepper, to taste
Salad:
8 ounces Cooked Salmon, cut into bite-sized chunks
4 cups Spring Greens Lettuce Mix
1 Orange, segmented
2 tbsp. Pomegranate Seeds
Small Red Onion, sliced
2 tbsp. Pumpkin Seeds
1 tbsp. White Sesame Seeds
Cup Blue Cheese Crumbles
6 Cooked Asparagus Spears, optional
Instructions:
Whisk all ingredients for the citrus vinaigrette together in a large mason jar or bowl. Set aside.
To assemble the salad, simply toss all ingredients together on a large serving platter and drizzle with Citrus Vinaigrette right before serving. If you’re meal prepping, make sure to pack the salad and dressing in separate containers.
